Sweet and tangy with a hint of spice, this sweet chili sauce is the quintessential dipping sauce for cold salad rolls and fried spring rolls.
2/3 cup water
2/3 cup superfine sugar
Juice of 2 limes (about 1/4 cup)
1/3 cup rice wine vinegar
1 tsp. fish sauce, or to taste
1 fresh Thai red bird chile, chopped or to taste
1 tsp. chopped fresh mint
Combine water and super fine sugar. Stir. Add lime juice, rice wine vinegar, fish sauce, fresh chile and mint. Taste and adjust sauce depending on how spicy, sweet or tart you like it.
Yield: About 1 1/3 cup.
