Stefano's Simple Side Salad

Simply dressed with olive oil and lemon juice, this watercress and frisée salad is the perfect side for hearty casseroles.


1 small bunch watercress, trimmed
4 handfuls frisée lettuce leaves
1/4 cup parsley leaves
1/4 cup olive oil
Juice of 1/2 lemon
Salt and freshly ground pepper, to taste
Lemon slices, for garnishing (optional)

Add watercress, frisée and parsley leaves to bowl. Drizzle with olive oil and lemon juice. Season with salt and pepper. Toss to combine. Garnish with lemon slices, if desired.

Yield: 4 servings.
