With mint and cucumber, this cool and refreshing yogurt sauce is perfect with spicy Indian dishes.
1 1/2 cup plain yogurt
1/2 cup cucumber, cubed
Pinch ground coriander
1 tbsp. chopped fresh mint
Salt and freshly ground pepper, to taste
Combine yogurt, cucumber, coriander, mint and salt and pepper. Taste and adjust for seasoning.
Yield: About 1 1/2 cups.
