Asparagus, Mint & Feta Salad

Serve this shaved asparagus salad with roasted or grilled lamb. If desired, add a handful or two of arugula to this salad.


1 large bunch asparagus, trimmed
1/2 small red onion, sliced
2 tbsp. chopped mint
Lemon zest, to taste
1/4 cup red wine vinegar
1/2 cup extra virgin olive oil
Salt and freshly ground pepper, to taste
1/4 cup chopped pistachios
1/3 cup feta, crumbled


Using a vegetable peeler, peel each asparagus stalk into long, thin strips. Place in large bowl. Add red onion, mint and lemon zest, Add vinegar, olive oil, and salt and pepper. Toss to combine. Taste and adjust seasoning. Plate salad and garnish with chopped pistachios and crumbled feta.

Yield: 4 to 6 servings.
