These Italian cookies flavoured with anise are like crunchy sugar cookies. They are a delicious treat with a cup of coffee or a glass of wine.
1 tsp. anise seeds
1 cup white wine
3 1/2 cups all purpose flour
2 tsp. baking powder
Pinch of salt
3/4 cup sugar
1/2 cup sunflower oil
Sunflower oil, for brushing cookies
Sugar, for coating cookies
Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.
Add anise seeds to wine, for 5 minutes.
Combine flour, baking powder and salt. Sift into a bowl. Add sugar and stir to combine.
Make a well in the centre of the flour mixture. Add the oil, and wine mixture. Stir with wooden spoon or use your fingertips to bring the dough together into a ball. Knead a few turns.
To shape the cookies into rings: Remove 1 tbsp. of dough. Roll into 4-inches long strips. Join the edges together to form a ring.
Brush cookies with oil and dip in sugar.
Transfer to baking sheet lined with parchment.
Bake cookies in middle of oven, until set and lightly golden brown on the bottom, about 30 to 40 minutes. Let cool and store in an airtight container.
Tip: If you’re baking sheets are thin, double them up to avoid cookies from over browning.
Yield: About 40 cookies.
