Add this tangy, spicy and sweet Jamaican jerk marinade to your barbecue repertoire. You'll love it on grilled chicken, pork or seafood.
1/4 cup vegetable oil
Juice of 6 limes
2 tbsp. ground allspice
2 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. ground cloves
1 scotch bonnet, desseded, or substitue jalapeno
About 1/4 cup chopped fresh thyme
8 green onions, roughly chopped
4 garlic cloves, chopped
2 tbsp. chopped ginger
2 tbsp. brown sugar
Add oil, lime juice, allspice, cinnamon, nutmeg, cloves, scotch bonnet, thyme, green onions, garlic, ginger, brown sugar, ingredients to food processor. Pulse until smooth.
Use as a marinade for chicken, pork or seafood.
Yield: About 1 cup.
