This quick and versatile side dish works for both weeknight dinners and holiday feasts. Serve with chicken, pork, turkey or beef. Beet greens are sweet and mild and similar in flavour to spinach.
4 cups beet greens, roughly chopped, thick ribs removed
1 to 2 slices bacon, diced
1 tbsp. olive oil
Salt and freshly ground pepper, to taste
Add bacon to fry pan over medium heat. When bacon is crispy, transfer to paper towel.
Remove all but 1 tbsp. of bacon fat from the pan. Add olive oil to pan. When oil is hot, add beet greens and sauté until just lightly wilted. Add bacon back to pan. Toss to combine. Season to taste. Serve.
Yield: 4 servings.
