Ideal for busy weeknights, this baked version of fried rice with lean ground pork and shiitake mushrooms is a healthy one dish wonder!
2 cups jasmine rice
2 celery stalks, diced
1 red pepper, diced
1 cup sliced fresh shiitake mushrooms, packed
1/4 pound to 1/2 pound lean ground pork
1 tbsp. soy sauce, or to taste
2 tbsp. hoisin sauce, or to taste
1 tbsp. sherry vinegar or rice wine vinegar
1 tbsp. sesame oil
3 cups boiling water
4 green onions, sliced on diagonal for garnish
2 cups bean sprouts, for garnish
1 cup diced pineapple, for garnish
Sesame seeds, for garnish
Soy sauce, for serving
Preheat oven to 350 degrees F.
Add rice, celery, red pepper, shiitake, ground pork, soy sauce, hoisin sauce, sherry vinegar, sesame oil to a 2-quart baking dish. Stir to combine. Add boiling water. Cover tightly with foil or lid. Bake until rice is tender and meat is cooked, about 45 minutes to 1 hour. Let rest, covered, about 5 to 10 minutes.
Fluff rice with fork and stir to mix. Garnish rice with green onions, bean sprouts, pineapple and sesame seeds. Serve with soy sauce.
Yield: 4 servings.
