Flavoured with savoury herbs and maple syrup, these homemade breakfast sausage patties are a snap to make! They're a perfect side for a stack of pancakes, French toast or waffles.
Ground turkey makes a delicious substitute for the pork.
1/4 tsp. dried rosemary
1/4 tsp. dried thyme
1/4 tsp. dried sage
1 tsp. ground fennel
1 1/2 pounds ground pork
1/4 tsp. freshly grated nutmeg, or to taste
Pinch cayenne pepper, or to taste
Salt, to taste
White pepper, to taste
1 tbsp. maple syrup
1 to 2 tbsp. vegetable oil, for pan
Maple syrup, for brushing
Using a mortar and pestle or spice grinder, grind rosemary, thyme, sage and ground fennel to a powder.
In a large bowl, combine ground pork, ground herbs, nutmeg, cayenne, salt, white pepper, maple syrup and egg. Mix to combine.
Divide mixture into 8 and shape into thin oval patties.
Heat grill or griddle pan over medium to medium high heat. Brush with oil. When oil is hot, add patties. Don’t overcrowd the pan, cook in batches if necessary. Cook patties until golden brown on each side and meat is cooked through, about 2 minutes per side. Brush patties with maple syrup to finish.
Yield: 8 (3-ounce) patties.
