With fresh sweet mango and crunchy cashews, this tropical coleslaw is a perfect side for barbecued chicken, burgers or ribs.
2 mangoes, peeled and diced
1 small cabbage, shredded (about 8 cups)
2 carrots, shredded
1/2 red onion, sliced
2 tbsp. chopped cilantro
Handful cashews
Dressing
6 tbsp. apple cider vinegar
2 tsp. Jerk Marinade or substitute hot sauce
1 tbsp. honey
6 tbsp. mayonnaise
2 tbsp. vegetable oil
Salt and freshly ground pepper, to taste
Add mango, cabbage, carrot, red onion and cilantro to a large bowl.
For the dressing: Add apple cider vinegar, Jerk Marinade, honey, mayonnaise, vegetable oil and salt and pepper to a bowl. Whisk to combine.
Toss salad with dressing. Garnish with cashews.
Yield: 4 to 6 servings.
