Ready in minutes, this simple and authentic garlic and olive oil pasta is real Italian fast food!
1 pound package spaghetti
1/3 cup to 1/2 cup extra virgin olive oil
4 garlic cloves, finely chopped
1 tbsp. chopped hot peppers packed in oil or dried chili flakes, to taste
Salt and freshly ground pepper, to taste
2 tbsp.chopped Italian parsley
Freshly grated Parmesan cheese, to taste
Bring a large pot of water to a boil. Generously salt. Add pasta to boiling water and cook until al dente.
Meanwhile, heat a large skillet over medium heat. Add olive oil. When oil is hot, add garlic and hot peppers, cook until garlic softens, about 1 to 2 minutes.
Add pasta to pan and toss to coat with sauce. If needed, add a little pasta water to the pan to loosen the pasta. Season with salt and pepper. Add parsley and toss. Serve with freshly grated Parmesan cheese.
Yield: 4 to 6 servings.
