Classic Margarita

Serve this tart and refreshing cocktail icy cold on the first day of summer or at any fiesta!

1/4 cup tequila
1 tbsp. to 2 tbsp. orange liqueur
1/ 4 cup freshly squeezed lime juice
2 tbsp. simple syrup, or to taste
Ice, as needed
Lime wedge, for rimming glass
Coarse ground salt, for rimming glass
Chile powder, for rimming glass (optional)
Lime slices, for garnish (optional)

For the simple syrup, add equal parts sugar and water to saucepan. Heat over medium heat until sugar dissolves. Remove from heat and cool before using.

Add coarse salt to a small bowl or side plate. For a spicy salt, add a little chile powder (such as cayenne, ancho, chipotle) to the salt.

Rub each martini glass rim with lime wedge. Dip rim of glass in salt mixture. Set aside.

Add ice, tequila, orange liqueur, lime juice and simple syrup to cocktail shaker. Shake well and strain into 2 martini glasses. Garnish with a slice of lime, if desired.

Yield: 2 servings.
