Berry-Delicious Recipes for the Season

It's still officially berry season and we all know they're never as juicy and sweet as they are peak-season. You can enjoy them fresh, of course, but don't forget how fantastic they are to cook with, now or plucked from your freezer in a few months if you can bear to stash some away. In drinks, pies and even sauces for deeply comforting meals, cooking with berries makes sweet or savoury dishes that much more special.

And a couple of tips:

Baking: try tossing berries with flour first before adding them to your baked goods. Stefano does this in his Blueberry Muffins recipe to help keep the berries suspended in the batter and prevent them from sinking to the bottom in the oven.

Freezing: Discard any mushy berries and remove stems. Wash and lay the berries on paper towels or dish towels until completely dry so excess moisture doesn't cause them to freeze in clumps. Lay them out flat in a single layer on a baking tray and freeze them 1-2 hours or until frozen, before transferring them to an air-tight container or re-sealable freezer bag. Try adding frozen raspberries to Stefano's White Sangria with Raspberries or toss a handful in your Very Berry Smoothie for an extra-cold and refreshing drink.
