Mini Chocolate Chip Ice Cream Sandwiches

INGREDIENTS

Chocolate Chip Cookies
2 cups flour
1 tsp. baking soda
1/4 tsp. salt
3/4 cup butter, at room temperature (unsalted)
3/4 cup brown sugar, packed
1/2 cup white sugar
1 egg
1 tsp. vanilla
1 1/4 cup milk chocolate chips

Assembly
Vanilla ice cream
Sprinkles, mini chocolate chips and/or candies, for rolling
Melted chocolate, for dipping (optional)


PREPARATION

Chocolate Chip Cookies
Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper.

Combine flour, baking soda and salt. Set aside.

In a large mixing bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add egg and beat until smooth. Add vanilla and continue to beat.

Stir in the flour just until combined. Don’t over mix. Stir in chocolate chips.

Using your hands, roll dough into 16 balls, about the size of a golf ball. Transfer cookies to baking sheets, leaving a 2-inch space between cookies. Press down to flatten balls.

Bake cookies until golden around the edges, about 10 to 12 minutes. Let cookies stand 10 minutes on baking sheet. Transfer to a cooling rack. Makes 16 cookies. Vary the cookie size, to make mini, regular or jumbo size cookies, adjusting the bake time as needed.

Assembly
To assemble ice cream sandwiches: Let cookies cool completely. Sandwich a scoop of ice cream between 2 chocolate chip cookies. Dip sandwiches in chocolate or roll in sprinkles, candies and/or mini chocolate chips. Serve immediately or make ahead and freeze.



Yield: 8 servings.
