This simple salad filled with fresh garden herbs pairs perfectly with any pasta dish and can be tossed up right before you're ready to eat.
1 (5-ounce) package mâche lettuce
1 small bunch watercress, woody stems removed
1 tbsp. chopped chives
1 tbsp. chopped tarragon
Handful basil leaves, torn
Zest of 1/2 lemon
5 tbsp. extra virgin olive oil
3 tbsp. white balsamic vinegar
Salt and freshly ground pepper, to taste
Add mâche lettuce, watercress, herbs and lemon zest to large bowl. Drizzle with olive oil and vinegar. Season with salt and pepper. Toss to combine. Taste and adjust for seasoning.
Yield: 6 to 8 servings.
