Chicken Sloppy Joes

Looking for a main dish the whole family will love? These Chicken Sloppy Joes will have everyone running to the dinner table. Vary the bun size to fit kid and adult portions.


INGREDIENTS

2 tbsp. olive oil
1 garlic clove, chopped
1 onion, finely diced
1 stalk celery, diced
1/2 red pepper, diced
Salt and freshly ground pepper, to taste
1.5 pounds ground chicken
Pinch chili powder, to taste
1 (14 ounce) can tomato purée
2 tbsp. honey
8 small buns
Veggie sticks, for serving


PREPARATION

Add olive oil to a skillet over medium heat to medium high. When oil is hot. Add garlic, onion, celery and red pepper. Sauté until vegetables start to soften, about 5 minutes. Season the mixture with salt and pepper.

Add ground chicken and chili powder. Cook until meat is browned and no longer pink, about 10 minutes. Add tomato purée and honey. Cook until sauce has thickened slightly, about 15 to 20 minutes.

Toast buns under broiler or grill the buns until golden brown. Fill buns with the sloppy joe mixture. Serve with veggie sticks.



Yield: 8 servings.
