For those who like their bacon and eggs in the morning, these Savoury Breakfast Waffles with egg, cheddar cheese and crispy bacon are the perfect way to top off Stefano's Waffles.
8 slices bacon, cooked until crispy
4 slices of cheddar cheese
4 fried eggs
1 tbsp. chopped chives, for garnish
Maple syrup, to taste (optional)
Put a slice of cheese on each waffle and place under broiler, just until cheese melts, about 1 to 2 minutes.
Garnish each waffle with bacon slices, a fried egg, chives and a drizzle of maple syrup, if desired. Serve.
Yield: 4 servings.
