Sautéed French Green Beans

Pine nuts add a flavourful crunch to this fresh and easy side dish.


INGREDIENTS

About 1/2 pound French-style green beans (haricots verts), trimmed
1 tbsp. olive oil
1 tbsp. butter
2 tsp. lemon zest
1 tbsp. pine nuts, toasted
Salt and freshly ground pepper, to taste


PREPARATION

Add beans to boiling salted water. Cook until tender crisp, about 2 to 3 minutes. Drain well.

Add olive oil and butter to skillet over medium to medium high heat. When oil is hot, add blanched green beans. Sauté beans until just tender, about 3 to 4 minutes. Season beans with salt and pepper and finish with pine nuts and lemon zest. Toss to combine. Serve.



Yield: 2 servings.
