Roasted Fingerling Potatoes

Impress your dinner guests with these Roasted Fingerling Potatoes (and don't tell them how easy they are to make).


INGREDIENTS

About 3/4 pound fingerling potatoes, sliced in half
Olive oil
Salt and freshly ground pepper, to taste


PREPARATION

Preheat oven to 400 degrees F.

In a medium bowl, toss fingerling potatoes with olive oil, salt and pepper. Transfer to baking tray. Cook until tender and golden brown, turning once, about 20 minutes.



Yield: 2 servings.
