Lamb Burgers with Feta and Mint Spread

These big fancy burgers have big flavour to match and they're a nice change from beef.


Lamb Burgers
1 1/2 pounds ground lamb
1 French shallot, chopped
1 tbsp. chopped capers
1 tbsp. chopped black olives (pitted)
1 tbsp. chopped Italian parsley
Salt and freshly ground pepper, to taste
4 lettuce leaves
8 slices tomato
1/2 red onion, thinly sliced
4 burger buns

Feta and Mint Spread
1 cup plain Balkan-style yogurt
1/2 cup mayonnaise
3/4 cup crumbled feta
1/4 cup chopped fresh mint
1 garlic clove, chopped
Juice and zest of 1/2 lemon
Salt and freshly ground pepper, to taste


In a large bowl, combine the lamb, shallots, capers, black olives, parsley, and salt and pepper. Divide mixture into 4 equal pieces and shape into burger patties. Let stand in fridge for 10 to 15 minutes.

Heat the grill on high. Brush and oil grill.

Add burgers to grill, turning once. Cook until meat is no longer pink, about 5 to 7 minutes per side.

Serve burgers in buns, garnished with lettuce, tomato, onion and topped with Feta and Mint Spread.

Feta and Mint Spread
Add yogurt, mayonnaise, crumbled feta, mint, garlic, lemon juice, lemon zest, and salt and pepper to food processor. Pulse until smooth. Makes about 2 1/2 cups.

Yield: 4 servings.
