Party-Style Focaccia

The secret to getting warm fresh bread on the table in minutes? Use store-bought pizza dough and dress it up with your favourite toppings. It's an eye-catching, welcome addition to any buffet table.

Top to suit your taste: try different cheeses, fresh herbs, sun-dried tomatoes, grilled onions, grape tomatoes, zucchini slices, or even paper-thin potato slices!


Extra virgin olive oil
2 pounds store-bought pizza dough
Handful black olives, pitted and chopped
Handful green olives, pitted and chopped
2 tbsp. finely chopped rosemary
Handful roasted red peppers, chopped
Coarse sea salt or kosher salt, to taste


Preheat oven to 375 degrees F.

Brush large baking sheet (15-inches x 11-inches) with olive oil.

Bring pizza dough to room temperature.

Dust work surface with flour. Roll out pizza dough, about 3/4-inch thick, into large rectangle shape to fit prepared pan.

Transfer pizza dough to baking sheet. Let dough rise in warm, draft-free spot, until puffed, about 15 minutes.

With your fingertips, dimple the dough all over. Generously drizzle with olive oil.

To each quadrant of the dough, add a different topping (black olives, green olives, rosemary, roasted red peppers) to create a party-style focaccia bread. Sprinkle dough with salt. Bake until golden brown and dough is cooked through, about 20 to 25 minutes.

Yield: 10 to 12 servings.
