Cremini, shiitake, and oyster mushrooms are tossed with a lemon and herb dressing for a fresh burst of flavour. They're the perfect match for a big, juicy steak.
About 2 pounds mixed mushrooms, such as shiitake, cremini and oyster
2 tbsp. chopped Italian parsley
1 tbsp. chopped mint
Juice of 1 lemon
3 tbsp. extra virgin olive oil
Salt and freshly ground pepper, to taste
2/3 cup crumbled Parmesan cheese (optional)
Heat lightly oiled grill pan or grill over moderately high heat until hot but not smoking.
Add mushrooms to grill, turning frequently, until golden brown, about 5 minutes. Cook mushrooms in batches to avoid overcrowding the pan.
To make the dressing: In a small mixing bowl, whisk together the parsley, mint, lemon juice and olive oil.
Add dressing to mushrooms and toss gently. Season mushrooms with salt and pepper. Finish with crumbled Parmesan cheese, if desired.
Yield: 4 to 6 servings.
