This elegant salad is tossed up in no time and dressed with a tangy white balsamic vinaigrette.
1 (5-ounce) package mixed greens
2 ripe pears, finely sliced, such as Bosc, Anjou or Bartlett
7 ounces aged cheddar, shaved or diced
3 tbsp. chopped walnuts
6 to 7 tbsp. extra virgin olive oil
3 tbsp. white balsamic vinegar
Salt and freshly ground pepper, to taste
Add salad greens to large shallow bowl or serving platter. Garnish greens with pears, cheese and nuts. Drizzle with olive oil and balsamic vinegar on top. Season with salt and pepper. Serve immediately.
Yield: 6 to 8 servings.
