This fiery spice mix is a classic Moroccan condiment. Used just like any hot sauce, to add instant wow factor and flavour to soups, stews or marinades. To tame the heat in this sauce, simply add more roasted red peppers to suit your taste.
1/2 cup olive oil
2 cloves garlic, minced
2 tbsp. cumin seeds, toasted and ground
3 tbsp. coriander seeds, toasted and ground
1 tbsp. dried chili flakes
1 tbsp. sweet paprika
2 to 3 roasted peppers, puréed
2 tsp. salt
Heat olive oil in small fry pan over medium heat. Add garlic and sauté until softened, about 1 to 2 minutes. Add cumin, coriander, chili flakes and sweet paprika, and cook until fragrant, about 2 to 3 minutes. Stir in puréed roasted peppers and salt. Bring to a simmer and cook for 5 to 10 minutes more. Makes about 1 cup.
Yield: About 1 cup.
