Did you make a New Year's resolution to eat better this year? Many of us have and that often means incorporating more vegetables into our meals. Salads are a great way to do that and just because the weather is cooler, that's no reason to discount them. Winter vegetables, beans and proteins combine to make salads that are fitting for this time of year and most importantly, that are delicious and make eating healthier a joy.
Salads can be served alongside a meal, of course, but adding a protein like grilled chicken or fish to your salad can make it hearty enough to be a meal in its own right. Beans and root vegetables benefit from marinating in a salad dressing and taste great the next day--so it's a great idea to make extra for lunch the next day too (just leave your leafy greens undressed until you're ready to eat.)
