Grilled Strip Loin Steaks with Homemade Steak Spice

This big, juicy steak is going to melt in your mouth. Seasoned with Stefano's Homemade Steak Spice and topped with Herb Butter.


Homemade Steak Spice
2 tbsp. peppercorns
1 tsp. fennel seeds
1 tsp. mustard seeds
1 tsp. coriander seeds
1 tsp. dill seeds
2 tsp. granulated garlic
1 tsp. granulated onion
1 tsp. dried chili flakes
3 tbsp. kosher salt

4 New York strip loin steaks, 1 1/2-inches thick
Herb Butter (optional)


Homemade Steak Spice
For the homemade steak spice: Add peppercorns, fennel seeds, mustard seeds, coriander seeds, dill seeds, granulated garlic, granulated onion, chili flakes and kosher salt to spice grinder or mortar and pestle. Grind until coarsely ground. Makes about 1/2 cup.

Let steaks sit at room temperature for 30 minutes to 1 hour. (Room temperature steaks will sear better and cook more evenly than cold steaks.)

Preheat your grill to high. Clean grill and brush with oil.

Pat steaks dry with paper towel. Season both sides of each steak with the Homemade Steak Spice.

Grill steaks until medium rare, about 5 to 6 minutes per side. Alternatively, grill steaks until done to your liking.

Let steaks rest for 5 minutes before serving. Finish steaks with Herb Butter, if desired.

Yield: 4 servings.
