Fudgy Brownies with Cream Cheese Frosting

This is the only recipe for brownies you will ever need! Chewy and moist with a deep chocolate-y flavour and topped with an indulgent cheese cream frosting; they're so good, you might need to make 2 batches.


15 ounces dark semi-sweet chocolate
3 1/2 tbsp. butter
3/4 cup all-purpose flour
1/2 tsp. salt
3 eggs
1 1/2 cups sugar
1 tsp. vanilla
Butter, for greasing the pan

Cream Cheese Frosting
1 (8 ounce) package cream cheese, room temperature
3 tbsp. butter, room temperature
1 cup icing sugar, sifted
1/2 tsp. vanilla
Pinch salt


Preheat the oven 325 degrees F. Butter a 9-inch x 9-inch baking pan and line with parchment paper.

Melt the chocolate and butter over double boiler. (Alternatively, melt chocolate in microwave, heating gradually, 30 seconds at a time, stirring after each 30 seconds, until the mixture has melted completely. Be careful not to overheat the chocolate.)

Combine flour and salt. Set aside.

In a large bowl, combine the eggs, sugar and vanilla. Using an electric hand mixer, beat until the mixture is pale and frothy.

Add melted chocolate mixture to egg mixture, mixing well using a hand mixer. Using a spatula, stir in the flour and salt mixture.

Pour the batter into prepared baking pan. Bake in the middle rack until cake tester inserted in centre comes out with just a few moist crumbs clinging to it, about 40 minutes. Let cool completely.

Spread cream cheese frosting on top. Cut into 9 squares.

Cream Cheese Frosting
With electric mixer, whip cream cheese and butter until fluffy and smooth. Add icing sugar, vanilla and salt. Beat until smooth.

Yield: 9 servings.
