This simple and elegant chocolate mousse will finish off any party on a sweet note.
3 cups whipping cream (35%), for mousse
11 ounces semi-sweet chocolate, finely chopped
6 tbsp. butter
1 tbsp. orange liqueur (optional)
1 cup whipping cream (35%), for garnishing
Candied orange slices, cape gooseberries, or strawberries, for garnishing
Add finely chopped chocolate and butter to heat-safe bowl. To melt chocolate, place bowl over pot of barely simmering water to create a double boiler. (The simmering water should not touch the bottom of the bowl, as it may scorch the chocolate.) When chocolate has melted, let cool to room temperature.
Whip 3 cups of whipping cream until stiff peaks form. Fold whipped cream into melted chocolate mixture in 3 to 4 additions. Fold in orange liqueur. Scoop evenly into 8 serving glasses or dishes. Let set in fridge, about 1 hour.
Before serving, whip 1 cup of whipping cream until soft peaks form. Garnish mousse with a dollop of the whipped cream and candied orange peel.
Yield: 8 servings.
