Couscous with Pistachios, Almonds and Apricots

Fast and fancy, this is going to be your new go-to side dish. It goes well with any grilled meat and it's a nice change from rice.


INGREDIENTS

1 1/4 cup instant couscous
1 1/4 cup boiling water
1 tbsp. chopped toasted pistachios
1 tbsp. chopped toasted almonds
2 tbsp. chopped dried apricots
2 tbsp. butter or olive oil
Pinch cardamom (optional)
2 chopped green onions, for garnish
Salt and freshly ground pepper, to taste


PREPARATION

Bring water to a boil. Stir in couscous, salt and pepper, cardamom and butter. Remove from heat and cover. Let couscous sit for 5 minutes. Fluff with fork and stir in nuts, apricots and green onions.



Yield: 4 to 6 servings.
