
These light and fluffy baked potatoes topped with sour cream, green onion and crispy bacon bits are the perfect accompaniment to grilled meat.
4 large baking potatoes, such as russet or Idaho
4 tbsp. sour cream, for serving
5 slices of bacon, diced and cooked
2 tbsp. chopped chives
Preheat oven to 350 degrees F.
Pierce potatoes with a fork and wrap potatoes in foil. Bake potatoes until tender, about 1 hour to 1 hour 15 minutes.
Serve baked potatoes with sour cream, bacon and chives.
