Jasmine Rice with Fresh Herbs

This simple side dish with Jasmine rice, Thai basil and fresh cilantro is a simple side dish that goes well with grilled fish.


INGREDIENTS

1 cup jasmine rice, rinsed
1 1/2 cups vegetable stock or water
Pinch salt
1 piece sliced ginger, about 1/4-inch thick
1 tbsp. chopped fresh Thai basil
1 tbsp. chopped fresh cilantro


PREPARATION

In a small saucepan, add water, rice, salt and ginger. Stir. Bring to a boil over high heat. Reduce heat to low and cover. Cook for 18 to 20 minutes. Remove from heat. Let stand covered for 5 minutes. Fluff with fork. Stir in fresh herbs and serve.



Yield: 4 servings.
