These healthy and delicious granola bars with coconut, cranberry and almonds are a great alternative to store-bought.
2 cups quick cooking oats
1 1/2 cups slivered almonds
1/2 cup honey
1/4 cup packed brown sugar
3 tbsp. sunflower oil
2 tsp. vanilla extract
1/2 tsp. salt
1/2 cup roasted sunflower seeds (unsalted)
1/4 cup wheat germ
1/4 cup ground flaxseed
2/3 cup dried cranberries
1 cup shredded coconut, toasted
Preheat oven to 350 degrees F. Grease an 8-inch x 8-inch square baking pan.
Spread oats and almonds on a baking sheet. Bake, stirring occasionally to evenly toast. Cook the mixture until almonds are lightly golden brown and fragrant, about 10 to 15 minutes. Set aside to cool.
In a small saucepan over medium low heat, add honey, brown sugar, sunflower oil and vanilla. Heat until brown sugar dissolves, stirring occasionally.
Meanwhile, in a large bowl, combine sunflower seeds, flax seeds, wheat germ, cranberries and coconut. Stir in the toasted oats and almonds. Pour in the honey and brown sugar mixture. Mix with hands until mixture is thoroughly combined.
Transfer granola mixture to prepared pan, pressing firmly to an even thickness. Bake until golden brown, about 25 minutes. Let cool completely before removing from pan. Cut into 9 squares.
Yield: 9 servings.
