Cherry tomatoes sautéed and sprinkled with fresh herbs make an easy, colourful side dish that's a nice change from the usual.
1 ½ pounds cherry tomatoes (vine ripe)
1 tbsp. chopped Italian parsley
1 tbsp. chopped fresh marjoram
1 tbsp. chopped fresh thyme
1 tsp. sugar
3 tbsp. butter
Salt and freshly ground pepper, to taste
In a large sauté pan, melt the butter over medium heat. When butter is golden brown, add the tomatoes and sprinkle them with the sugar. Season the tomatoes with salt and pepper. Increase heat to high and continue to sauté tomatoes, stirring gently, until tomatoes start to soften and skins begin to wrinkle, about 5 minutes. Add the herbs, mix well and serve.
Yield: 4 servings.
