Saucy Garlic BBQ Ribs

These ribs are tender and delicious, with an Italian-flavoured sauce that will have everyone licking their fingers.


INGREDIENTS

Rub
3 pounds spare ribs
¼ cup olive oil
4 garlic cloves, peeled and chopped
2 tbsp. hot pepper flakes
2 tbsp. chopped fresh sage
2 tbsp. chopped fresh rosemary
1 tsp. freshly cracked black pepper
1 tsp. salt

BBQ Sauce
¼ cup olive oil
4 garlic cloves, peeled and chopped
2 cups jarred tomato sauce
1 tbsp. Worcestershire sauce
1 tsp. hot pepper sauce
Salt and freshly ground pepper, to taste


PREPARATION

To make the rub for the ribs: Mix together olive oil, garlic, hot pepper flakes, sage, rosemary and salt and pepper. Spread rub mixture evenly over both sides of the ribs. Cover with plastic wrap and marinate in the fridge for at least 2 hours or up to 24 hours.

Meanwhile, make the sauce. Heat the olive oil in a heavy-bottomed saucepan pan over medium low heat. Gently cook garlic until soft, about 3 to 5 minutes. Add the tomato sauce, Worcestershire sauce and hot pepper sauce. Bring to the boil and reduce to a simmer. Cook sauce, stirring frequently, until reduced to a dry, thick paste and no liquid remains, about 30 minutes.

Preheat oven to 325 degrees F. Line a baking sheet with a double layer of aluminum foil with enough overhang to wrap foil around the ribs.

Lay ribs, bone side down on the foil-lined baking sheet. Spoon the sauce evenly over the top of the ribs. Wrap foil around the ribs and seal. Bake until ribs are tender when poked with a knife. When ready to grill, remove ribs from foil and shake off the excess sauce. Reserve the sauce for basting.

Preheat grill to medium heat.

Grill ribs until browned, turning and basting ribs with sauce every five minutes. Total grill time is about 20 minutes.
