Bitter greens are sweetened-up with a fresh and simple orange vinaigrette, creating a delicious salad that shines on a dinner plate.
2 tbsp. olive oil
2 tbsp. orange juice
2 tbsp. champagne vinegar
Salt and freshly ground pepper, to taste
5 cups bitter greens, such as arugula, endive, frissée
1 tbsp. green onion, finely chopped
Orange zest, for garnish
Parmesan shavings, for garnish
To make the orange vinaigrette: whisk together orange juice, champagne vinegar, olive oil, and salt and pepper. Taste and adjust for seasoning.
In a large bowl, add greens and green onion. Add vinaigrette and toss gently to combine. Garnish salad with fresh orange zest and Parmesan shavings.
Yield: 4 servings.
