A classic Mexican dip made with ripe avocados, fresh lemon juice and coriander. Everyone needs a recipe for guacamole, and this one can be whipped up in minutes.


2 ripe avocados
Juice of ½ lemon
½ tsp. ground cumin
¼ tsp. ground coriander
2 tbsp. extra virgin olive oil
Salt and freshly ground pepper, to taste


Cut each avocado in half, remove pit. Scoop out the meat of each avocado into a medium bowl. Add lemon juice, cumin, coriander and olive oil. Mash with a fork or potato masher until smooth. Season the guacamole with salt and pepper. Taste and adjust seasoning.

Yield: 6 to 8 servings.
