
Chive butter takes traditional corn on the cob to fresh new heights.
Grilled Corn
4 ears corn, blanched
Extra virgin olive oil, for brushing
Salt and freshly ground pepper, to taste
Chive Butter
¼ cup butter, softened (unsalted)
2 tbsp. chopped fresh chives
Pinch cayenne, or to taste
Salt and freshly ground pepper, to taste
Grilled Corn
Heat grill to medium high.
Brush each ear of corn with a little olive oil and season with salt and pepper. Grill until lightly charred and heated through, turn as needed, about 5 to 7 minutes. Serve with Chive Butter.
Chive Butter
Mix together butter with chives, cayenne and salt and pepper. Makes about ¼ cup.
Yield: 4 servings.
