Apples, carrots, cranberries, and cumin come together to create an elegant fresh-tasting salad that's the perfect companion to grilled meat.
4 medium carrots, grated
1 apple, diced
½ cup dried cranberries, coarsely chopped
1 ½ tsp. whole cumin, toasted and ground
¼ cup extra virgin olive oil
Juice of ½ lemon
Salt and freshly ground pepper, to taste
In a large bowl, combine carrots, apple, cranberries, cumin, olive oil, lemon juice, salt and pepper. Let salad sit in fridge to allow flavours to marry, about 10 to 15 minutes. Taste and adjust seasoning, adding a little more olive oil or lemon juice, as needed.
Yield: 4 servings.
