Substitute any of your antipasti favourites for the artichokes in this recipe.
For a vegetarian option, substitute roasted red peppers for the salami. If you don't have a panini press, cook the sandwiches in a grill pan or cast iron fry pan, pressing the sandwich flat with a weight such as a heavy fry pan or a brick covered in aluminum foil.
4 ciabatta buns, sliced in half
1 small jar of artichokes, packed in oil, chopped
4 tbsp. mayonnaise
1 tsp. lemon zest
16 slices salami
12 slices provolone cheese
Drain artichokes, reserving some of the oil. Set aside.
Brush outside of bread lightly with the oil from the artichokes.
Combine mayonnaise and lemon.
Assemble sandwiches with lemon mayonnaise, salami, provolone and artichokes.
Grill the sandwiches in a panini press until cheese melts and bread is toasted, about 4 to 5 minutes. Cut each sandwich in half and serve.
Yield: 4 servings.
