Baked Fries

Stefano proves that delicious, golden fries can be made in the oven.


4 Russet or Idaho potatoes, unpeeled
About ΒΌ cup extra virgin olive oil
Sea salt and freshly ground black pepper, to taste


Preheat oven to 425 degrees F.

Cut each potatoes into 6 to 8 wedges. Transfer to a large bowl, coat generously with olive oil and season with salt and pepper. Toss to combine.

Spread the wedges on a large non-stick baking sheet. Divide between 2 baking sheets if fries are overlapping. Bake until fries are golden brown and fork tender, turning fries occasionally, about 30 to 35 minutes.

Yield: 4 to 6 servings.
