Bacon adds a ton of flavour, texture and crunch to this zesty salad.
12 red new potatoes, cooked and cut in half
4 handfuls of baby spinach
4 slices bacon, cooked until crispy and cut into 1-inch pieces
¼ cup slivered almonds, toasted
¼ cup extra virgin olive oil
2 tbsp. balsamic vinegar
2 tbsp. mayonnaise
¼ tsp. sambal oelek or your favourite hot sauce, to taste
Salt and freshly ground pepper, to taste
To make the dressing: Add olive oil, balsamic vinegar, mayonnaise and hot sauce to a small bowl. Whisk to combine. Season the dressing with salt and pepper.
When potatoes are still warm, add to a large bowl and toss with dressing. Add the bacon, spinach and almonds and mix gently. Taste for seasoning and adjust. Serve immediately.
Yield: 4 servings.
