Laurie MacKay's ginger cocktails

This summer, our Homestretch sommelier Laurie MacKay is branching out - and bringing us some ideas for summer drinks.

This week - she tackles ginger. Here's the recipe:

Ginger Old-Fashioned Cocktail
2 oz Four Roses Bourbon
½ oz coffee vodka
½ oz ginger simple syrup (see recipe below)
1 dash (3 drops) Angostura bitters
2 -3 ice cubes
Cherry (fresh or maraschino) to garnish
Pour the simple syrup and Angostura bitters into a whisky (old fashion) glass. Stir to combine, add ice cubes in the glass. Pour bourbon and coffee vodka over the ice. Garnish with a cherry.
Ginger Simple Syrup
Take 1 cup water, 1 cup refined sugar and ¼ cup chopped ginger (or more if you want a stronger flavour). Put it in a saucepan and bring to a boil over medium heat. Stir until the sugar melts and then simmer about 5 minutes. It has to cool before you use it and it will keep for up to 5 days in the fridge.
