Recipes: BBQ Turkey Skewers with Cucumber Yogurt Dip

If you can't find cipollini onions, dice a sweet Vidalia onion or red onion instead.


BBQ Turkey Skewers:
1 small turkey breast (about 1.4 pounds), cut into 1-inch cubes
12 cipollini onions, peeled
12 cherry tomatoes
Extra virgin olive oil, for brushing onto skewers
Salt and freshly ground pepper, to taste
12 (6-inch) metal or bamboo skewers

Cucumber Yogurt Dip:
1 cup yogurt
½ cup sour cream or low fat sour cream
1 small cucumber or ½ large, grated
1 garlic clove, minced
1 tbsp. extra virgin olive oil
Juice of 1 lemon
1 tbsp. chopped fresh dill
Salt and freshly ground pepper, to taste


BBQ Turkey Skewers

If using bamboo skewers, soak in water to help prevent them from burning on the grill.

Thread skewers by alternating one cube of turkey, one onion, one cherry tomato and then another cube of turkey. Brush the skewers with olive oil and season with salt and pepper.

Preheat grill to medium high.

Add skewers to grill. Flip once, grilling until turkey is cooked all the way through but still juicy, about 10 to 12 minutes. Alternatively, use grill pan to cook skewers. Serve with Cucumber Yogurt Dip. Makes 12 small skewers.

Cucumber Yogurt Dip

Combine yogurt, sour cream, cucumber, garlic, olive oil, lemon and dill in medium bowl. Season the dip with salt and pepper. Taste and adjust for seasoning.
