1 pound green beans, trimmed and blanched
2 tsp. orange zest
2 oranges, peeled and segmented
½ small red onion, thinly sliced
2 tbsp. sliced almonds, toasted
2 tbsp. raisins, soaked in hot water
¼ cup extra virgin olive oil
2 tbsp. aged balsamic vinegar
Salt and fresh ground black pepper, to taste
In a large bowl, combine green beans, orange segments, red onions, almonds and raisins. Add olive oil, orange zest and balsamic vinegar. Season with salt and pepper and toss to combine. Taste and adjust for seasoning. Serve.
