Recipe: Pumpkin Guacamole Poke


1 carved pumpkin

6 large ripe avocados, mashed
2 limes, juiced
1 clove garlic, minced
3 tbsp olive oil
ΒΌ tsp cayenne pepper
salt (to taste)
pepper (to taste)

2 tuna steaks, cubed
2 ripe avocados, diced
1 cup macadamia nuts
1 tbsp toasted sesame seeds
3 tbsp soy sauce
1 tbsp sesame oil
1 tbsp rice wine vinegar
200g Korean seaweed salad


Combine soy sauce, sesame oil and rice vinegar, divide into 2 bowls. Cut tuna into 1 inch cubes toss in one half of soy mixture. Toss avocado in remaining half. Set aside.

Place carved pumpkin on a serving board. Arrange guacamole so it appears as if it is coming out of the mouth and all the way down the surface of the serving board. Place tuna and avocado chunks sporadically throughout the guacamole.

Garnish with sesame seeds and Korean Seaweed salad. Serve alongside nacho chips.
