Recipe: Paleo Pancakes

If you’ve never eaten like a caveman it’s time to start. Shahir’s recipe for Paleo Pancakes is fluffy, delicious and approved by Paleo fan Helene Joy of 'Murdoch Mysteries'. See if you like them as much as her!

Ingredients

2 cups fresh raspberries
Juice of half an orange

2 bananas, divided
2 whole eggs
2 egg whites
4 tbsp coconut flour
¼ tsp cinnamon
¼ tsp ginger
¼ cup pecans, chopped

2 tsp coconut oil for frying
Fresh berries and dried coconut for serving

Preparation

For sauce:

In a sauce-pot on medium high, heat 2 cups raspberries and orange juice for 10-12 minutes until thickened. Feel free to gently mash the berries. Strain through a sieve making sure to press firmly so all the juice comes out.

For pancakes:

Mash 1 banana in a large mixing bowl. Add 2 whole eggs and whisk until combined. Stir flour, and spices into wet mixture. In a separate bowl beat egg whites until firm. Gently fold into batter along with pecans, and your second banana, sliced into thin rounds.

Add 2 tsp coconut oil to a non stick pan over medium low heat. Swirl around to coat the pan. Add 4 ladles of batter to the pan, this should use up all of the batter. Cook a few minutes per side, paying close attention as coconut flour can quickly burn. Flip over and cook until golden brown. Serve with your sauce, fresh berries and dried coconut, enjoy!
