Chocolate Chip Waffles

Waffle irons are quite affordable and easy to use - perfect for any household with kids. Serve with maple syrup and bananas in winter or fresh berries in summer.

Ingredients

2 cups (500 mL) all-purpose flour
1/4 cup (60 mL) granulated sugar
2 tsp (10 mL) baking powder
1/2 tsp (2 mL) baking soda
1/4 tsp (1 mL) salt
2 eggs
2 cups (500 mL) buttermilk
1/4 cup (60 mL) butter, melted
1/3 cup (75 mL) mini chocolate chips
2 tbsp (30 mL) vegetable oil

Preparation

In large bowl, whisk together flour, sugar, baking powder, baking soda and salt.

In small bowl, whisk together eggs, buttermilk and butter; pour over flour mixture, sprinkle with chocolate chips and stir just until combined.

Heat waffle iron according to manufacturer's instructions. For each waffle, brush iron lightly with some of the oil; pour in 1/2 cup (125 mL) batter, spreading to edges. Close lid and cook for 4 to 6 minutes or until crisp, golden and steam stops. (Make-ahead: Let cool. Wrap individually and freeze in airtight container for up to 1 month. Reheat in toaster.)
