1 5 lb antibiotic and hormone free chicken
kosher salt and freshly cracked black pepper
Remove chicken from refrigerator as the oven preheats to 450F. Line a baking sheet with parchment paper and place a rack on top. Using paper towels, thoroughly dry the chicken, inside and out. Season the chicken cavity with salt and pepper.
Using butcher’s twine, truss the chicken, bringing the legs together and tying the wings close to the body. Season the outside with salt and pepper and place the chicken breast side up on the prepared rack.
Roast the chicken undisturbed for at least forty minutes. Insert your thermometer in between the breast and the thigh, as this is the thickest part of the chicken. Chicken is ready when the thermometer registers 165F. Let chicken rest for 15 minutes before serving.
