2012 food trends
Earlier this morning, Julie Van Rosendaal (@dinnerwithjulie) stopped by with her picks for food trends in 2012. She also brought in these delicious scones:
Aviv Fried's Dark Chocolate and Coconut Scones
slightly adjusted by Julie Van Rosendaal
(Yields 4 large scones)
Ingredients
1/2 cup butter
1 1/2 cups organic flour
1/2 cup sugar
1/2 tbsp baking powder
1 pinch baking soda
1 pinch fleur de sel (or regular salt if unavailable)
1/3 cup dark chocolate chips
1/4 cup unsweetened coconut flakes
1/4 cup sour cream
1/2 cup whipping cream
Method
Cut butter into pea-sized pieces. (Or grate it on the coarse side of a box grater.)
On work surface, mix flour, baking powder and baking soda, butter and sugar with hands.
Mix in chocolate chips and coconut flakes.
Place dough in bowl, add sour cream and whipping cream. Mix with spoon just enough to create a gooey mix. If the batter is too wet, add a little more flour. Tip: make sure there's some dry flour left on the bottom of the mixing bowl and add a little extra cream right at the end for lighter, airier scones.
Form four fist-sized balls of dough (don't pack them too hard) and place on lightly greased baking tray.
Bake in pre-heated oven at 400 degrees F for 15-20 minutes until bottoms are pale, golden brown. Cool on rack.
