Sounds of the Season - Christmas Breakfast

Christmas dinner is often the traditional turkey - but what about when you wake up? To give us some fresh new ideas about what we can cook up for Christmas morning, we invited Chef Leo Grado to join us. (Runs 4:45)


French Toast Casserole

8 Large eggs (Room temperature)
1 cup Milk
2 cups Half & Half Cream
1 teaspoon Sugar
¼ teaspoon Cinnamon
2 pinches Nutmeg
1 teaspoon Vanilla
pinch Salt
¾ of Loaf Bread (Texas toast)

1) Butter a 9 by 13-inch baking dish
2) Arrange bread overlap the slices in 2 rows
3) In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt
4) Whisk ingredients well, make sure not to have to many bubbles (foam)
5) Pour mixture over the bread slices
6) Make sure all the bread is covered evenly with the milk-egg mixture
7) Cover with foil and refrigerate overnight
8) Pre heat oven @ 350 f
9) Remove casserole and leave out until proper oven temperature is reached
10) Place casserole in the oven with foil on
11) Bake for 15 minutes then remove foil
12) Continue to bake for 15 more minutes. Check for doneness and for colour.
